I had SO much fun painting this Italian sweet bread. Panettone is originally from Milan and is traditionally a Christmas, winter time treat. I love how light and fluffy, almost cotton candy in texture. My studio was filled with the subtle perfume of this wonderful model as I painted it. Some come with candied fruit or chocolate chips. This one, left over from the holidays simply has raisons.

Panettone has a wonderful resilience, with such an incredible shelf life; thanks to the long lactic fermentation, sourdough proofing period and the high fat contact, often with 20% butter, makes it rich and light and seemingly it rarely gets dry -even after painting it all day!
