This is one of my favorite Pennsylvania Cheeses, made by one of my favorite cheese makers, and one of my favorite humans: Sue Miller, at Birchrun Hill Farms.

I was able to get a whole wheel of this crazy good washed rind raw milk beauty when I visited the farm on one of their incredibly fun Cheesy Friday Night Happy Hours - (every friday evenin!).

It was a fun challenge, because I had a chance to really indulge in this beautiful pinkish orange rind. Really this painting is all about the rind.
