Every time I bring home some of "The King of Cheese" , Parmigianno-Reggiano, especially aged by Cravero, I relearn how wonderful it is.

This cheese is SO sweet, it's really a great dessert cheese. A lot of "parms" out there are salty, bitter and range in levels of harshness, but server well when grated over pasta. Cravero's however is like a sweet gouda. Not too salty, but just enough to make your mouth remember how much it forgot it loved this incredible cheese!
