The history of the macaroon can be traced back to an Italian Monestery of the 8th or 9th century. They made their way to France via a Medici marriage and later they were adopted by Jews because they have no flour and perfect for passover observation.

My love of all things coconut had seen the instagram post of a local bakery/cafe near my studio when they posted these fresh, sexy looking balls of shredded coconut, baked golden brown and ready to eat. I stopped over and picked a couple up to paint. After playing with composition, I took head on, the cut, half mound of this coconut cookie. To be honest, I am not sure it photographs as well because the painting relies on more nuance of value and color shifts in this mostly monochromatic lump.

Most importantly, they are absolutely DELICIOUS. I am not sure what the traditional recipe should be , but I find these perfectly made with what tastes like rich butter in them.
