From the Cheese Portraits series.
This cheese was an unexpected discovery by Allison Lakin of Lakin's Gorges Cheese in Waldoboro, Maine. When she placed the curd from her Opus 42 in a small mold, the size of the wheel demonstrated the impact of flavor and texture development. She ages this natural rind cow's milk wheel for 3-8 months and the simplicity of just salting the curd and ladle into molds really expresses the seasonal diet of her grazing cows.
It's named after Charles W. Morgan, the last surviving wooden whaling ship, and It's a nod to her previous career working in Maritime museums. Allison intends to make this a fall seasonal offering. Make sure you look for it later in the year.
