Cornish Kern

From the Cheese Portraits series.
Kern (which means ’round’ in Cornish) is a pasteurized cow's milk cheese with Alpine starter cultures added, which create the Gouda-like texture and incredible nutty, sweet flavor.
I first had a chance to taste this while on a Cheese Journey tour in England, and Otto from Lynher Dairies, who told me his family's dairy wasn't quite sure it was ready to be considered "perfected" and then it won "Supreme Champion" at the World cheese Awards. I guess it's ready, it sure tastes like perfection to me. This farmhouse cheese is rich from the grass and Cornish milk from their herd of Ayrshires and it's coated in breathable black wax.
