Known also as "Mountain Gorgonzola" this more aged version of Gorgonzola Dolce is also rich and soft and delicious but with a more bold flavor and sometimes even a little bite. Made with full fat, pasteurized, cow's milk it's aged 80 days and named after the town in Lombardy of Northern Italy.
Gorgonzola is supposedly created in the Middle Ages between the years 879-1007 AD. Legend tells that its origin is owed to an absent minded cheese maker rushing to see his lover. The forgotten curds later had fresh curds added to the vat with hope to salvage the batch. The blue mold that had grown in the paste a few months later, proved a delicious discovery and the first intended creation of mold.
