I was fortunate to find this small production stunner that rarely appears stateside when I stopped in my favorite local cheese shop, Di Bruno Brothers. One taste and I had no free will, it became a matter of need. Cheeses like this, of this quality, do not come along often.

Produced in Périgord, this cow's milk cheese is washed 3 times with walnut liquor. This small wheel is beautifully aged by nationally recognized artisan affineur, Rodolphe LeMeunier in his caves in the Loire Valley. It is semi firm, and nutty due to the toasty treatment of the milk with flavor of the liquor is expressed in the paste without losing the over all quality of the milk. You can taste the finesse that created the impressive balance between sweet and savory. This cheese has enough flavor that allows you to savor thin slices of both the paste and thin line of liquor-rich rind to make one think of a sacrament.
