I cannot explain why it took me so long to finally paint one of France's oldest cheeses! It is said to date from as far back as Roman times, some rumors say even the Druids enjoyed it. I suspect I subconsciously avoided it because I had no idea how to pronounce it. FYI: I think "form dom bear" which helps, admittedly though, it evokes some disturbing images of Yogi.
Regardless this is an incredible raw cow's milk blue cheese from the Auvergne region of France. It's made as a tall, cylinder and with a high (50%) fat conent making it soft and fudgy. This indulgent cheese is indeed incredibly velvety smooth and creamy, mellow and mushroomy-good. The earthy scent might surprise you how mild and nutty the flavor is, making it a gateway blue for anyone that hesitates with blue cheese.
