Inspired by an Italian Robiola, this full-flavored pasteurized goat cheese is made made at Shellbark Hollow Farm in Chester County, by Pete Demchur, the first goat cheesemaker in Pennsylvania. He named this cheese after one of his favorite goats ("Maisie Daisy sat up like a dog in the corner")
This cheese is made when there's extra milk from their own Nubian goat heard. It has a tangy rich buttery flavor with a bit of funk as this little wheel is quite ripe and the wrinkly rind most beautiful, in my opinion.
I had fun painting this little wedge of a little bloomy rinded wheel of goat farmstead cheese so I painted it small, intentionally to celebrate those textures.
