Harbourne Blue

From the Cheese Portraits series.
This porcelain-white goat's milk blue is made by Ben Harris at Ticklemore Cheese Dairy in Devon, Southwest England. Ticklemore , the cheese, originated here and now is made at neighboring Sharpham Farm. The Dairy now makes only blues and this slightly dryer take on Roquefort-blue suits the delicate pasteurized goat's milk which they source from the Lewis family, in Somerset. It's made with vegetarian rennet and with light blueing has a mild buttery and milky taste that goes well with everything, in my opinion.
I always love painting blues but I especially enjoyed the stark white paste contrasting with its dramatic "horror movie" shadow.
