This collaborative cheese is the "Best of Show" 2nd place champion of 2019's American Cheese Society competition, ranked 2nd among over 1700 other cheeses.

Made for Wegmans Food Markets by Old Chatham, Professor's Brie was a partnership with David and Sally Galton, owners of Old chatham Sheepherding Company in Groton, NY. David is a retired animal science professor at Cornell University, hence Wegmans naming it to honor him. Their flock of sheep pasture in the Finger Lakes Region and produce rich, high protein milk which gives the seductively creamy velvety texture and delicate taste.
After 3 days, Old Chatham sends the newborn wheels to Wegmans Cheese Caves in Rochester, NY where they can develop the texture, flavor and aroma under that white, pillowy bloomy rind. Two weeks of care and this champion cheese has a buttery texture with a subtle nutty and mushroom flavor. It really is too easy to eat and once must be warned: after posing for a portrait for several hours, this is like satin and butter had a love child.
