Proper spelling and pronunciation are rather difficult for me, more simply "Olomouc cheese" , is made in Lostice, Moravia, of the Czech Republic. A friend was generous enough to smuggle some back from Prague and while he brought back many options, including two shapes of this same cheese, (another shaped like mini hot dogs/fingers)... I opted for painting the pack of small donut shapes. Though each piece is just under two inches in diameter, the taste and flavor however is BIG. These were getting pretty ripe by the time I brought them into the studio. The color is a pale, translucent yellow ochre and the outside was getting a sticky, tacky bright orange film. All my research says it's normally sticky, so I was not alarmed.

This cheese is made from (non-fat)skim milk. It has a completely unique spicy flavor, and a strong smell that is not for the delicate nose. One description I found, while researching, compared its aroma to that of a reptile house in a zoo; I was impressed with their restraint. It tastes like a very strong washed rinded cheese, but in the most unique, pungent way; it goes really well with pilsner!

It is said to have nutritional values, containing only 0.6% of fat but high in protein and calcium, making it ranked among the top cheeses. This aged table cheese is also made without using rennet, colorings or flavorings.
