Isidro Alves from Sand Hill Dairy, was kind enough to send me a wheel of his artisanal cheese. As it turns out, I found that artisanal cheese is a rarity in Nevada and Sand Hill Dairy's is celebrated for its fresh milk and cheeses produced from their family of cows. This white, crumbly, fresh cows milk cheese is made in Fallon, Nevada and is a traditionally Mexican cheese.
