Coated with a blend of local La Colombe coffee, cocoa and hints of chili's and cinnamon then aged for 7 months, this raw milk alpine-style cheese is a delicious addition to Sue Miller's lactic portfolio at Birchrun Hills Farm. I especially enjoy the slightest bitter coating that compliments notes of caramel and nutty paste that's somewhat firm yet creamy. Birchrun Hills is one of the most popular cheese producers in the Philadelphia area and I was lucky enough to get half a wheel as my model. Tomme Molé is SO good.
