This Scottish gem is made with unpasteurized sheeps milk by Selina Errington in Carnwath (near Edinburgh), Lanark, Scotland. My friends at Dibruno Bros. stressed how rare an opportunity it was as it's the first wheel imported into the US. The delicious firm,nutty manchego-like cheese has a beautiful stripped rind, having been aged clothbound. As I inspected it in my studio, I was seduced by that flirty amber glow that really showed off the rind.
