This robiola-style cheese is a relatively new one made by Briar Rose Creamery in Oregon. They wash it porter beer, which was the first thing I smelled as I unwrapped it. Though I love just about every washed rind cheese, this one is especially beautiful. The paste and rind combo, when sliced thin, tag-teams to produce a mild yet slightly gamey dance on the tongue while staying mild and fresh and super balanced. It's pretty great!
