From the Cheese Portraits series.
This is a beautifully delicious alpine cheese sent to me by Joe Salonia, of Gourmino LTD - master cheese makers in Switzerland. This alpine cheese differs from Le'Gruyere as its only made in summer months before its aged for at least 2 years. You can taste the grassy herbal influence of the season. Joe sent me some shavings and spare pieces for me to tinker with. They lost their curl in transit, so I applied my trusty potato peeler to the extra hunk to accompany the monumental wedge I had planned. I had to revisit a dramatic dark background choice to take full advantage of the shavings, and also go a little larger to fit it all with any decent detail.
