This is a delicious limited run blue cheese from Meadowood Farms that's named to honor John Lincklaen who was the founder of Cazenovia, NY. Veronica Pedraza, the Cheesemaker informed me it was a special batch made with 100% sheep's milk. It's incredibly mellow and on the sweet side with notes of fennel, anise, licorice.

It's such a great cheese made with the sheep's milk, I hope she makes it again!!! (please, please, please)
