From the Cheese Portraits series.
This is a raw cow's milk cheese from Landaffe Creamery, in New Hampsire. It's a washed-rind beauty thats made in the style of a soft French tome. I loved the gamut of subtle colors that appear on the puffy rows on the rind. This one had lots of personality and I especially loved the way it looked from the side. Seeing this buttery goodness makes me hungry. After it is made, the wheels go over the the Cellars at Jasper Hill for their magical aging services. It's no surprise then that it comes out so pretty.
