Appenzeller, known as Switzerland's spiciest cheese, it's part of 700 year tradition. During the aging process, this cheese is washed with special "secret" herbal brine that includes wine and cider. Sent to me from Emmi Roth USA to include in a series of 12 commissions that will hang proudly on their walls and make up a beautiful calendar! The the foil wrapper, with Swiss flag, was fun to contrast with the dramatically dark stage where the cheese glows with flavor.
