This is the signature cheese of Emmi Roth USA. This giant among Wisconsin cheese makers makes some wonderful gruyere styled cheeses and they commissioned me to paint some. Im happy to have 20+ lbs of a bounty in my refrigerator. This one has a sweet mellow fresh-grass and rich yet subtle fruity flavor. I snacked on some while I painted this ...um, to help focus on its beauty!
