My cheese monger offered up this ancient looking cheese that apparently doesn't come along often.

Testun di Capra is a washed-rind goat's milk cheese hailing from the Piedmonte region of Italy. The name means "hard head" and it refers to its compact consistency. It is produced with goat and sometimes with sheep and cow's milk, from animals that are free to pasture all summer. So it is a great fall-time cheese.
